Roasted Beet And Kale Salad


  • 2 eggs
  • 1 sweet potato, cubed
  • 1/2 avocado
  • Avocado oil
  • Garlic powder
  • Crushed red pepper flakes
  • Sea salt
  • Black pepper


    • Heat a skillet over medium heat and add 1 tablespoon of avocado oil.
    • Add the cubed sweet potato and season with garlic powder, sea salt, and black pepper. Cook for 8-10 minutes or until the sweet potato is tender and lightly browned.
    • While the sweet potato is cooking, crack the eggs into a separate skillet and cook to your desired doneness.
    • Once the sweet potato and eggs are cooked, plate them and top with sliced avocado.
    • Season the dish with crushed red pepper flakes and a pinch of sea salt, if desired.
