Breakfast scramble


INGREDIENTS

  • 1 red onion, cut into ½-inch dice
  • 1 red bell pepper, seeded and diced
  • 1 green bell pepper, cut into ½-inch pieces
  • 8 ounces sliced mushrooms
  • 1 large head of cauliflower, cut into florets
  • Sea salt
  • ½ teaspoon freshly ground black pepper
  • A pinch of cayenne pepper, or more to taste
  • 3 cloves of garlic, minced
  • 1 to 2 tablespoons soy sauce

    DIRECTIONS:

    • Place the onion, peppers, and mushrooms in a medium skillet or saucepan over medium-high heat and cook for 7–8 minutes.
    • Keep adding water 1 to 2 tablespoons at a time as needed, so that the vegetables don't burn.
    • Add the cauliflower and cook, stirring occasionally, for 5 to 6 minutes or until it is tender.
    • Add salt, pepper, and other seasonings—such as turmeric or cayenne—to taste. Cook the mixture for 5 minutes more so the spices are well combined with the vegetables.
