Chicken Fajitas


  • 3 chicken breasts (boneless and skinless)
  • 1 onion, thinly sliced
  • 3 bell peppers, thinly sliced
  • 2 tablespoons olive oil
  • 1/2 lime


  • 1/2 tablespoon chili powder
  • 1/2 tablespoon ground cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper


  • 1 ¼ cups split yellow lentils, uncooked
  • 1 ¾ cups warm water
  • Avocado oil to grease the cooking pan


        • Combine the fajitas seasoning ingredients in a small bowl.
        • Grind the fajita seasoning into both sides of each chicken breast.
        • Place 2 tablespoons of oil in a large skillet and heat over medium.
        • Cook the chicken breasts on both sides until they are golden and crispy.
        • While your chicken is cooking, cut the onion and peppers into thin slices.
        • Remove the chicken from the oven and let it sit for a couple of minutes before serving.
        • Place the bell peppers and onion in the skillet with olive oil over medium heat, then sauté for 4-5 minutes or until soft.
        • While the peppers are sauteing, cut the chicken breasts into strips.
        • Add the chicken back into the skillet and squeeze some fresh lime juice over top.
        • Serve the tacos immediately with lentil tortillas and toppings such as pico de gallo and guacamole.


        • Place the yellow split lentils in a sieve and run cold water over them until they are clean.
        • Place the drained lentils in a blender.
        • Place all remaining ingredients in a high-speed blender and allow to soak for 8 hours or overnight at room temperature.
        • Put the blender jug on the base and blend at speed 10 for 20-25 seconds or until pancake batter texture.
        • Mix the batter well and leave it to rest for 10 minutes.
        • Add a light coating of avocado oil to a non-stick pan and warm the pan over medium heat.
        • To make a tortilla, put 1/3 cup of batter in the center of the pan and use a circular motion to spread it until it forms a thin layer.
        • If the pan is too hot, holes may form in your pancake batter. To fix them, add a dollop of batter to fill the hole and don't touch it until it's done cooking.
        • Cooking time will vary depending on the heat of your stove and the thickness of your cooking utensils, but it should take between 2-3 minutes to cook one side, then 1-2 minutes more for a second side.
        • Place the flatbreads on a platter or rack while you cook the remaining batter. Grease your pan between each round of cooking to ensure that things don't stick!
