Greek Chicken Kabobs


  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 3 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 3 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 large chicken breasts, cut into 1 1/2-inch pieces.
  • 1 red bell pepper, seeded and cut into 1½-inch pieces
  • 1 medium yellow bell pepper, seeded and cut into 1-1/2" pieces
  • 1 red onion, cut into 1-inch chunks
  • 1 zucchini, sliced


  • 1 1/2 cups greek yogurt
  • Peel and grate 1 medium cucumber.
  • 2 tablespoon fresh dill, chopped
  • 2 cloves garlic, minced
  • 2 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon salt


  • To make the marinade, mix together olive oil, red wine vinegar, lemon juice, Dijon mustard (mixed with a little water), minced garlic cloves (minced yourself or bought already prepared at most grocery stores in jars), dried oregano leaves—crushed between your fingers to release their flavor better into the dish. Salt and pepper add great compliment as well!
  • Place the chicken pieces in a glass dish and pour the marinade over them. Cover with plastic wrap, then refrigerate for at least one hour.
  • Thread skewered pieces of red onion, chicken, zucchini and bell pepper onto a medium-high heat grill. You can alternate the order in which you place them on the skewers if you wish.
  • Grill the kabobs for about 5 to 7 minutes per side.
  • After 15 minutes, the chicken should be cooked through and the vegetables slightly charred.
  • Serve with lemon wedges and homemade tzatziki.
  • Soak your cashews overnight; drain and rinse them thoroughly.
  • Blend the cashews, water, lemon juice and garlic in a high-powered blender for 1 to 2 minutes.
  • Place the cucumber in a fine mesh sieve over a bowl and press down to remove extra liquid.
  • Alternatively, you can drain the liquid by hand. Place the cashew mixture in a mixing bowl. Add the drained cucumber, dill and salt and stir until well combined.
  • Let chill for 30 minutes before serving.
