Kale Quinoa Bowl


INGREDIENTS

  • 1 lemon, juiced
  • 1/4 teaspoon each salt, pepper, garlic powder, ground cumin and cinnamon
  • 1/2 cup of cooked quinoa
  • 1 bunch chopped kale
  • 1 apple, sliced
  • 1/4 cup of dried, unsweetened cranberries
  • 1/4 cup of chopped pecans
  • 1 Tbsp pumpkin seeds
  • Strawberry Balsamic Vinaigrette
  • 1/4 Cup balsamic vinegar
  • 2 Tbsp sugar-free jam strawberry
  • 1/2 tsp fresh rosemary, finely chopped
  • 1/2 Tsp dijon mustard
  • 1/2 lemon, juiced
  • Salt and pepper to taste

    DIRECTIONS

    • To make the vinaigrette, add all ingredients to a blender, and blend until smooth.
    • Drizzle over bowls right before serving. It's a good idea to drizzle the dressing over the salad right before serving. This will help prevent it from getting soggy and will ensure that every bite of your salad is full of flavor!
