Roasted Vegetable Bisque


INGREDIENTS

  • 12 Vine ripe tomatoes
  • 4 cups Cauliflower florets
  • ½ Red onion, chopped

  • 5 cloves Garlic
  • 3 tbsp Nutritional yeast
  • 1 tbsp Oregano
  • 2 tsp Sea salt
  • 1 cup Vegetable broth
  • 1 tsp Freshly cracked black pepper

          DIRECTIONS

          • Heat the oven to 400F. In an oven-safe casserole dish, mix all of the ingredients except for the broth.
          • Bake the cauliflower for 35 to 40 minutes, without covering it.
          • When cool enough to handle, remove the vines from the tomatoes and place them in a blender.
          • Stir in more broth, a little at a time, if the mixture seems too thick.
