Vegan Broccoli Salad


INGREDIENTS

  • 5 slices tempeh bacon, cooked & chopped
  • 2 heads broccoli, diced
  • ¼ cup pistachios, diced
  • 1 yellow bell pepper, diced
  • 1 red onion, diced

 SRIRACHA TAHINI DRESSING INGREDIENTS

  • ½ cup tahini
  • 3 tbsp warm water
  • 1 lemon, juiced
  • 2 tbsp sriracha
  • 1 tbsp maple syrup

DIRECTIONS:

  • Cook tempeh bacon according to link or package instructions.
  • Combine dressing ingredients in a jar and whisk until smooth. Add more water as needed to thin to a desired consistency.
  • Assemble all listed salad ingredients in a bowl. Pour dressing over top, toss and enjoy.
