Vegan Caesar Salad with Crispy Chickpea


INGREDIENTS

  • 1 cup raw cashews
  • 6 tbsp lemon juice
  • 1 tbsp dijon mustard
  • 1 clove garlic
  • 1.5 tbsp capers
  • 1 tbsp caper brine
  • Water to thin
  • 1/4 tsp salt
  • 1/4 tsp pepper

FOR CRISPHY CHICKEN CROUTONS

  • 1 can chickpeas
  • 1 tbsp olive oil
  • 1 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/2 tsp dried dill
  • Salt & pepper

FOR TOPPING THE SALAD

  • Sun-Dried Tomatoes
  • Vegan Parmesan
  • Crispy Chickpea Croutons
  • Tempeh Bacon Crumbles

DIRECTIONS

  • To make the dressing, place all the ingredients into a high-speed blender and blend until smooth. Then strain the dressing and set it aside.
  • Next, rinse and dry the chickpeas, and toss them in seasonings. Air fry at 400°F for 12-14 minutes or bake for 25-30 minutes at the same temperature.
